Watermelon Slush

I think this is my favorite way to drink watermelon. If it’s been a long day, you can add some vodka or tequila. If you are feeling fancy, add in some sparkling whatever (I bet club soda, ginger ale and champagne would all work.) On it’s own, it’s like a thick agua fresca.

Just remove the seeds and blend! If I put the watermelon into the fridge before blending, then I don’t think it needs ice, but if it starts at room temperature I definitely drop in a couple of cubes.

Box 5 – Week of July 28

When my box came today, I had to do a sad thing. Go to the fridge and make room… because there were things that had become inedible hiding in the vegetable drawer. That’s why my mom calls in the “vegetable rot drawer” – when it’s closed, sometimes it’s easy to forget that they are hiding in there. Today it was a banana pepper, two little squashed, a bell pepper and sweet potato greens that were sent to the dumpster. This blog is supposed to remind me not to do that! I’ve put updating this blog on my calendar now, so maybe that will help?? We can hope.

Today’s box is beautiful! Do I always say that? I may need more adjectives… It smells fantastic due to the spearmint in it.

Today we have: 

Canteloupe (still muddy!), okra, sweet potato greens
Onions, jalapenos, sweet peppers, butternut squash
Spearmint, eggplant, yukon gold potatoes

I know that the last sweet potato greens died, but it wasn’t because they were bad, I just forgot about them. I ate some! I’ll do better this time, I swear.

Any ideas on what to do with the spearmint?? It smells wonderful, I want to think of something fun.

Roasted Okra!

I am ashamed to admit that our next box comes tomorrow and the okra that I was so thrilled to receive 13 days ago was still in our fridge tonight. D. Dishwasher has been working ridiculously long at work, so I’ve been cooking for myself and never remembered to pull out the vegetables down in the drawer….

Luckily they had not gone bad! Well, 3 or 4 of the little guys had, but out of a pound that is not much. So I looked up a recipe that would be similar to the grilled okra that I loved on the 4th of July, but wouldn’t require a grill.

Just okra, oil, salt and pepper!

If you are interested in trying it out, just chop okra, dry it, add oil and seasonings, then cook at 450º for 25 minutes!

If you’re curious, the brown ‘sauce’ on the rice and chicken is Madras Lentils. It reminds me of chili and is one of my favorites to use in a super-quick dinner.

Box 3 report card

Box 3 Report Card

Basil – Used some, dried the rest. Waiting in the cabinet for me.

Onions – Used one of them, but there is another left… at least they save well!

Watermelon – Sliced and eaten! Half way. Some is left in the fridge…

Cucumbers – Drank some as part of an agua fresca (I should have added mint!) The rest are in the fridge as refrigerator pickles (I added some of the serranos from the basic idea found in this recipe and this one, but this one looks good, too!) I realized I hadn’t tasted them yet, so I just made a quick test and they are tasty! The skin is a bit thick, but I think that is just the kind of cucumber. I also used some dill that I had dried from a previous box. I may try this with Box 4’s okra, too…

Peppers – Banana peppers and bells eaten with hummus. Serranos used in foods and slipped into the pickle jar.

Tomatoes and eggplant – Used up in zaalouk!

Okra – Grilled!

Squash – partly used…. one of those little guys may be going bad, though…

Box 4: Week of July 13

IMG_6826Look at our pretty box! I am slow posting this, but, other than the basil, this box seems fantastic. And really my only thing with the basil is that I can never seem to use it all.

So this week we have:
Basil, Eggplant, Watermelon
Pepper mix, Okra. Arugula (yay!)
Sweet potato greens (who knew those existed??) and cherry tomatoes

The cherry tomatoes are gone already, but I do believe that it’s time to get to work on the rest of it.

Box 3 update

Well, I have definitely been using the veggies from box 3, I just haven’t posted about it yet. The thing is that I was so busy enjoying the foods that I didn’t even get the pictures taken! 

So, starting with the things I shared at a fourth of July party:

First up, tomato cucumber salad with basil. It was something like the ones at the following links:
     This one adds avocado and cheese, which sound like fun additions, but I didn’t use red onion like she did for breath reasons
     This one from PeTA is actually a lot like what I did, but I added some olive oil as well. (sidenote: who knew they had recipes??)

Next, we have grilled okra. I never thought to grill it before, but it was great! Just brush on olive oil and it was fantastic.

Serrano peppers – Most of them have been used, in various dishes that need spicing up.

Bell peppers – I have been eating them straight for lunch or as a snack with hummus.

This box has been really successful so far, I might even finish it before the next one arrives on Tuesday!

As a parting thought, here is the double zucchini muffin from the last box. I just doubled the zucchini called for (3 cups instead of 1.5) and even Designated Dishwasher liked them!

Box 2 Report Card

Well, I did much better than last time! The only thing that was truly wasted was the basil, and that was a complete accident. I didn’t realize that putting cut basil in the fridge would make it really nasty. But it does. Well, at least I looked up what I should have done and have already used it from Box 3.

Report on how I used Box 2

Here is how I used this week’s box ingredients:

Carrots – Oven roasted with olive oil and salt (eaten with couscous), and in beef stew

Yellows onions – Also in the couscous!

Tomatoes – I don’t even remember! But they were good

Watermelon – On its own for dessert

Banana peppers – sliced and put into a jar of pickled peppers in the fridge that I had just finished… tasted one the other day and they are already great!

Squash – sauteed with turkey and used in mega-zucchini muffins (I just doubled the zucchini. It worked!)

Red Cabbage – sautéed with jalapeño bacon… mmm… If you don’t know how easy and delicious this is, this blog has a description that is the same way I have done it since high school!

Leeks – I think I might roast them like this. We’ll see.

And I already told you about how I ruined all of the basil. It was after I decided I should have pesto pasta for dinner, too, so it’s lucky that I have basil plants growing outside my door. Are there any vegetables that you have tried to ‘keep’ in the completely wrong way? Any magic ways to keep some longer?
